Pomegranate-Champagne Punch

Ingredients
- 1/2 cup water
- 1/2 cup sugar
- 2 750-ml bottles chilled brut Champagne
- 1 1/2 cups white rum
- 1 1/4 cups pomegranate juice
- 1 large lemon, thinly sliced
- Pomegranate seeds (optional, in my opinion…)
- Fresh mint leaves

This cocktail is a piece of cake – just mix all of the ingredients together and serve! Very festive for the holidays.
Start by making a simple syrup: Bring 1/2 cup water and sugar to boil in small saucepan, stirring until sugar dissolves. Simmer 5 minutes. Cool syrup completely.
The original recipe also calls for Pomegranate seeds, but honestly, I didn’t see a need to get all “foofy” with this. Also, I didn’t really see what they would add other than increased cost.
Combine ingredients and add enough simple syrup to sweeten the drink to your liking.
